Organic
wheat is grown without the use of pesticides, herbicides and
synthetic fertilizers used to produce conventional wheat crops.
As a result, the production of Organic Wheat is only a small
fraction of the total wheat produced…the latest statistic being 0.3
percent of total wheat production in the United States.
Rock
Creek Organics hard red spring wheat is grown, stone ground into flour,
and packaged by Great Grains Milling in northeastern Montana.
Only
hard red spring wheat, famous for its high quality is used.
Millers commonly mix it with lower grades of wheat to raise the
quality of the flour.
We don’t and won’t.
What we offer is the highest quality flour from the highest quality
wheat.
Stone
grinding is a special process that yields the desirable texture of fine
flour and relatively coarse bran.
Because of this, stone ground baked goods have a distinctively
whole and natural appeal.
We offer Whole Stone Ground Wheat flour and Golden Wheat flour.
The Golden Wheat flour has most of the bran removed and is
used as a general purpose flour whereas the Whole Wheat flour is
best for bread making.
